Drops are sold at West Indian groceries usually near the check out.

I prefer the ones my grandfather made at home. It’s a tasty snack and extremely sweet.

1 medium coconut
5 tbsp fresh ginger, shredded
3 cups brown sugar.
1 cup water

Break the coconut with a hammer and remove the hard outer shell. Scoop out the flesh of the coconut and dice it into small cubes.

Combine the diced coconut cubes and the fresh ginger. Put them in a deep pot and add sugar and water.

Bring to a boil over high heat. Boil until the water has evaporated and the sugar becomes caramelized and sticky.

Stir the mixture constantly to prevent it from sticking to the bottom of the pan.

Place a sheet of greased paper on a flat surface.

Spoon out mixture on the greased paper to create 1 inch wide mounds (drops). Space each mound evenly so that the drops do not melt into each other.

Allow the drops to cool and harden.
