As the name suggests, the Easter Spice Bun is baked for the Easter holiday.
The bun resembles a fruit cake because it is baked with a lot of dried fruit.
But unlike fruitcakes, this bun is too tasty to give away. Jamaicans eat it like a sandwich with a hunk of cheese between the slices.
I prefer it slathered with butter and then topped with cheese. Enjoy it as a snack.
1/4 cup butter, melted
1 cup granulated sugar
1 bottle of Stout
1/4 cup honey
2 eggs, lightly beaten
3 teaspoons vanilla extract
1 cup mixed fruits (raisins, cherries, mixed peel)
3 cups flour
2 teaspoons baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon Allspice
In a large bowl, combine melted butter with sugar and stout.
Add honey; mix well and allow mixture to cool. Add lightly beaten eggs and vanilla. Mix to combine.
In a separate bowl, add mixed fruits. Sift flour and baking powder together.
Add flour mixture, nutmeg, cinnamon, and Allspice to the mixed fruits.
Add the dry mixture to the liquid mixture. Mix batter well and pour into a greased loaf pan.
Bake at 325 F for 15 minutes. Reduce heat to 300 F and continue baking for approximately 1 hour, or until done.
Remove bun from oven and allow it to cool completely.
