Jamaicans love their sorrel drink. It is a festive beverage served during the Christmas season.
It is made with or without alcohol. The drink is quite refreshing and tastes like a fruity summer cooler.

3 cups sorrel
1 oz ginger, crushed
1 piece dried orange peel
6 whole cloves
6 cups boiling water
2 cups granulated sugar
Juice of 1 lime
1/4 cup Jamaican white rum (optional)
1 tbsp white rice

Place sorrel, ginger, orange peel, and cloves in a large pot. Pour in boiling water and stir. Cover and allow liquid to steep for 24 hours.
Strain liquid through a sieve or cheesecloth. Sweeten with sugar and lime juice. Add rum if necessary.

Pour the strained sorrel into large air tight jars or bottles. Add a few grains of rice to each bottle.

Tip
* Adding rice to the sorrel drink helps to hasten fermentation.
* Leave sorrel at room temperature for at least one day before drinking.
